HEAVEN HILL 7 YEAR BOTTLED-IN-BOND
50% ABV | Bardstown, KY
Pays tribute to the earliest days of Heaven Hill’s history, when in 1939 they released their first Bottled-in-Bond whiskey. That bourbon was their namesake brand and quickly became the top-seller in Kentucky. It uses 78% corn, 10% rye, and 12% malted barley for its mash bill.
Bottled-in Bond is a standard for American whiskey that has been aged and bottled in accordance with a set of legal regulations initially outlined in the Bottled-in-Bond Act of 1897. To be labeled (BIB), a whiskey must originate from a single distillery, produced during a single season (January to June or July to December), aged for a minimum of 4 years in a federally bonded warehouse, and bottled at 100 (50%) Proof. The label on the bottled product must indicate the distillery where it was distilled and, if different, where it was bottled.
TASTING NOTES
Nose: Warm notes of vanilla, honey, and a rich caramel sweetness
Palate: Smooth, warm and sweet with a subtle rye spice note; caramel and honey mingle with just enough oak and char to round of the richness
Finish: Long and lingering
RARE CHARACTER DINNER PICK 2024
56.5% ABV | Distilled in Indiana, Finished in Kentucky
On May 21st, 2024 Allocated hosted the second Rare Character Fiori Barrel Pick Dinner. Out of 4 blinded barrel picks, this 6 year Bourbon had a 14 month finish in an Armagnac cask and was crowned the winner after half of the crowd picked it. Armagnac is a kind of brandy produced in the Armagnac region in Gascony, in southwest France. It’s typically more fragrant than its sister spirit, Cognac. This Bourbon uses a 60% corn, 36% rye, 4% malted barley mash bill.
Rare Character was founded by Pablo Moix and Peter Nevenglosky in 2021. While they’re a NDP (Non-Distiller Producer) they have access to a number of distilleries across the country, including Kentucky, Tennessee, and Indiana. All their barrels are aged further and bottled in Kentucky. Their goal is to push the envelope and introduce new flavors and concepts to whiskey connoisseurs and collectors. For instance, our 2022 Fiori Barrel Dinner Pick was a Bourbon finished in white port seasoned casks for 1 year.
TASTING NOTES
Nose: Simple syrup, honey, maple, marzipan, creme brulee custard, vanilla, chocolate, baking spice
Palate: White raisins, distilled grapes, honey ice cream, toffee, bourbon flavored creamer, pear, buttery, baking spice, candied citrus fruits, dry
Finish: Snappy finish, subtle dryness, nutty, semi-sweet, oak tannin, peppercorn, dry tobacco, bittersweet cherries
MICHTER’S KENTUCKY STRAIGHT RYE
42.4% ABV | Louisville, KY
Michter’s Rye is made from select American rye grain that is sheared to maximize the extraction of flavor from the grain. Every bottle comes from a single barrel.
TASTING NOTES
Nose: Caramel, cherry, and green apple. Rye spice adds potency, while oak provides a well-rounded base to the aroma.
Palate: A warming rise of baking spice, caramel, and oak give way to sweet cinnamon buns. A light buttery mouthfeel adds some soft texture before delicate citrus notes move in.
Finish: Turns noticeably dry on its onset. Slowly, a prominent note of gingerbread is introduced before oak and leather take over the finishes focus. Soft pepper notes linger on the whiskey’s aftertaste keeping in line with the overall tone of the finish.
RABBIT HOLE BOXERGRAIL RYE
47.5% ABV | Louisville, KY
Boxergrail celebrates Louisville’s rich boxing heritage. Louisville has a fighting spirit fueled by the local boxing culture.
Boxergrail uses toasted and charred barrels. They slowly toast their barrels over a wood-fired flame before charring, a process that takes up to 20 minutes per barrel. Toasting coaxes sugars from deep in the fibers of the wood which mingle with the distillate during the aging process, giving their whiskies unparalleled complexity and flavor. This is a high rye (95%) whiskey with malted barley (5%) rounding out the mash bill.
TASTING NOTES
Nose: Summer fruits, hints of vanilla, subtle rye spice, touch of white peppercorn, light and airy.
Palate: Oak, hints of dry leather and tobacco, light spice, sweet vanilla, and earthy.
Finish: Rye spice, dry oak, flashes of vanilla, short and to the point.
LARCENY BARREL PROOF B524
62.7% ABV | Bardstown, KY
Bottled at full barrel strength, Larceny Barrel Proof gives customers a chance to try a Wheated Bourbon in its purest form. This Barrel Proof series from Heaven Hill releases 3-small batches every year. B524 = B Batch from May of 2024. Each batch is 6-8 years old and uses the same mash bill of 68% corn, 20% wheat, and 12% malted barley.
TASTING NOTES
Nose: Heavy caramel, spicy pepper, barrel char, melted chocolate, cinnamon, roasted mixed nuts, freshly baked bread.
Palate: Dark fruits, cinnamon and robust baking spices, hazelnut, raisin, medium-bodied.
Finish: Cinnamon and Mexican chocolate, barrel char, nutmeg, black pepper, a touch dry and hot, but the heat dissipates quickly.
ANGEL’S ENVY #1 THE ALCTD ANGELS
55% ABV | Louisville, KY
If you know Angel’s Envy then you know they really kickstarted the popularity of barrel finishing whiskey. From using Rum casks for their Rye to using Port casks for their Bourbon. This pick from Allocated is a 5-6 year Straight Bourbon that matured in a #3 char virgin American oak barrel that was then transferred to Port wine casks for an additional 6.5 months. While similar to the standard bottling, this is definitely different. The standard is 43.3% abv for a start and this has a malty long lingering profile. This uses a 72% corn, 18% rye, 10% malted barley mash bill.
TASTING NOTES
Nose: Rich caramelized oak, subtle vanilla, cherry cola, malt sugar, roasted almonds, stone fruit
Palate: Viscous port, red grape skins, barrel-aged maple, toasted oak, pomegranate seeds, subtle bitter tobacco, apricot, 72% cocoa dark chocolate
Finish: Silky oak tannins, malted barley, lingers long, subtle mint, subtle cherry, leather, light oil, almond skins
