M-I-S-S-I-S-S-I-P-P-I. Alright, now that we’ve got that out of our system, let’s introduce the Old Soul pick coming out of Cathead Distillery. With a lot of sweetness in the market and a lot of things coming out of Kentucky and non-distillery producers, the heads at Allocated are always on the mission to change it up. With Smoke Wagon’s operation being on their mind, in how they source totes from Indiana and aging it in Nevada, this led them to entertain a few other entities that did the same. Same, same, but different. Mississippi is the home of the river, square dancing and the honey bee. It just also happens to be the home of the first legal distillery in the state of Mississippi.
When presented with numerous samples, there was one that stood above the rest. Long called BS on the mash bill after tasting the juice. She’s a spice girl. We’re talking Posh Spice, Scary Spice and Ginger Spice. Just in time for the holidays, we need something to elevate our poultry and red meats. This dram will make you want more, as the wild profile of being 75% corn can barely be detected. Whether it be due to the steamy southern summers with 70%+ humidity or whatever it maybe, the dram brings to light the spicy and woody influences in a bourbon. Absolute gold.
While all ALCTD picks are generally picked to be savored neat, this one is an amazing exception. When used the base bourbon in a Gold Rush cocktail…it elevates everything.
