NOSE: Eggo waffles, McGriddle bun, french toast sticks, sweet fortified wine, brown sugar, caramelized candies
PALATE: Viscous, full-bodied, rich oak tannins, bitters, vanilla creme, stewed brown sugar, alcoholic Aunt Jemima syrup
FINISH: Vanilla extract, sweet nitrous oxide (vanilla whip cream), very subtle rye spice

Annnnd we’re back at it again!
Allocated’s second rum select after the success of our last Papa’s pick. This time, we’ve brought it back to America and did a rye cask finish. Again, we love doing these different spirits to break the mold of what you usually associate with rum and lord knows if anyone has swung in Allocated anytime lately, it seems like our rum selection has doubled so quick that it’s maddening.
For those who need a slight refresher- see our first pick HERE for the details behind the brand and behind the name of the brand which is Papa’s Pilar. I’ll also reiterate to the purists out there, sometimes it doesn’t need to be from a single estate, cane sugar or molasses only, etc. Sometimes it just needs to be good.
Time and time again, the anthem at Allocated is ‘screw the price tag or how cool the bottle looks, we just want to drink what’s good.’
For those of you coming in to entertain this new pick of ours, you will need to put an argument to rest for the nosing notes. Is this really: Eggos with Auntie J, a McGriddle bun or is it French Toast sticks when you were in 4th grade?
If you love a good dark rum and loved our past Papa’s Pilar pick, you must entertain this bottle. Wildly enough, the yield was indeed a shorty with only 102 bottles hitting the shop. So swing in and let us know what style of rum you want us to entertain next, as we can’t imagine this lasting too long on the shelves!
