TASTING NOTES

NOSE: Red Twizzlers, faint butterscotch, red berries, malted rye, caramelized sugars, sweet bread, apple pie, toffee, oak

PALATE: Smoof in the front, pie crust flakes, brown sugar, vanilla creme, apple skins, baking spice, viscous, roasted pecans, butterscotch, citrus zest

FINISH: Subtle tannins, medium-long finish, toffee, drying spices, nuanced pepper tones, stewed orange rinds

BEHIND THE BOTTLE

This one goes way back- like, a few years back- when Kaveh, the founder of Rabbit Hole, made his inaugural trip to Alaska. His first stop? Fiori D'Italia. Fresh off a flight from France and straight into the heart of Alaska’s finest whisky scene, Kaveh and Ylli hit it off instantly. But here’s the twist, his first impression wasn’t the impressive whiskey collection or the masterful cocktails he was crafting that evening. Nope. It was the escargots. Yes, you read that right, snails. He asked to speak to the chef, Ylli's father, and couldn’t believe that Alaska had such exquisite escargot. From that moment, the relationship between Fiori and Rabbit Hole blossomed faster than you can say “caviar of the snail world.”

On one of Ylli’s first visits down to KY, it only made sense to do a tour of the Rabbit Hole distillery, followed by surprise- The Northwest’s very first (and somewhat controversial—ask Ylli about that story) Rabbit Hole barrel pick.

Onto present day: the Rabbit Hole Heigold barrel pick, affectionately dubbed The Scrooge. This barrel was initially picked unofficially during the early days of ALCTD’s opening. Long story short; discrepancies in pricing led us to reject it- unfortunate, because the Heigold barrel really stood out. Many wonder why we do barrel picks at all because you really don’t make money buying and turning barrels. Well, this is a prime example: a brand maintaining its core SKUs while also exploring the magic of single barrels at cask strength. If it has a unique enough profile that’s not similar to the core SKU on the rack, and it slapps? It deserves to be bottled as a single barrel. It’s all about striking that perfect balance.

EDITOR’S NOTES: This is the first malted rye expression that we have ever released at the shop. For those of you who are New Riff fans, you’ll love this pick. This has the rollercoaster of what we want in good bourbon. Quintessential sweetness, with a dash of citrus/orchard fruits all balanced out with nutty and peppery undertones.
